Blueberry Overnight Oats with Kefir

Start your morning with a nutritious and delicious bowl of Blueberry Overnight Oats with Kefir! Oats provide heart-healthy fiber to keep you full, blueberries are packed with antioxidants to support brain health, and kefir offers probiotics for gut health. This easy, make-ahead breakfast is creamy, refreshing, and perfect for busy mornings!


Ingredients

  • 85g gluten-free jumbo oats

  • 1 tbsp shelled hemp seeds

  • 1 tbsp chia seeds

  • 2 x 120g pots kefir yogurt

  • 240g semi-skimmed milk or almond milk

  • 125g blueberries (or any other berry)

  • 2 tsp pumpkin seeds chopped

    Topping ideas: 1 level tbsp almond butter / 2 chopped dates / drizzle of honey


  1. Tip the oats, 1 tbsp of the hemp seeds and the chia seeds into a bowl, then mix well. Stir in the kefir yogurt and milk. Cover and chill overnight. The mixture will thicken overnight as it soaks.

  2. The next morning, spoon into two glass tumblers and top with the berries, the pumpkin seeds and toppings of your choice.
